Pepperoni Pizza Rolls

Ingredients

Pizza Dough

  • 3½ to 4½ cups all-purpose flour
  • 2 packets (4½ teaspoons) Fleischmann’s® RapidRise® Instant Yeast
  • 3 teaspoons (1 tablespoon) sugar
  • 1½ teaspoons kosher salt
  • 1⅓ cups water (warmed to 120°F–130°F)
  • 6 tablespoons corn oil

Pizza Rolls

  • 1 cup pizza sauce
  • 2 teaspoons Italian seasoning
  • ½ teaspoons kosher salt
  • 4 ounces sliced pepperoni
  • 1½ cups mozzarella
  • 1 teaspoon red pepper flakes

Garlic Butter

  • 6 teaspoons salted butter, melted
  • 3 cloves garlic, diced
  • 2 teaspoons fresh parsley, diced
  • 2 tablespoons fresh parmesan, grated

Directions

For Pizza Dough

  1. Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky.
  2. Knead on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. Let the dough rest at this point for 10 minutes.

For Pizza Rolls

  1. While the dough is resting, preheat the oven to 425°F (190°C).
  2. Place dough on a well-floured work surface.
  3. Roll dough into a rectangle (about 12x17 inches).
  4. Spread pizza sauce into a thin layer, leaving a ½-inch border.
  5. Sprinkle dough with mozzarella, pepperoni, Italian seasoning, kosher salt, and red pepper flakes.
  6. Trim about 1 inch off each side of the log (these are scraps; bake separately or toss)
  7. Starting from the long edge, begin rolling the dough into a log.
  8. Slice into 1-inch pieces and place the cut-side face down in a 12-inch cast-iron skillet.

For Garlic Butter

  1. Mix melted butter, garlic, parmesan, and parsley.
  2. Brush generously over swirls before baking.
  3. Sprinkle additional parmesan on top.
  4. Bake for 25–30 minutes, until golden brown.
  5. Serve warm with extra pizza sauce for dipping!
