Ingredients

  • 2/3 cup apple juice
  • 2/3 cup apple sauce
  • 3 tablespoons honey
  • 1 (2-1/4 tsp.) envelope Fleischmann's® Active Dry Yeast
  • 3 tablespoons butter OR margarine, melted
  • 1/2 cup granola
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1-1/2 cups whole wheat flour
  • 1/2 cup dried cranberries
  • 1-1/4 to 1-3/4 cups all-purpose flour

Directions

  1. Heat apple juice, apple sauce and honey until warm (100° to 110°F) and pour into large mixer bowl. Add yeast and let sit 5 to 10 minutes, until foamy. Add butter, granola, cinnamon, salt and whole wheat flour. Mix well, cover and let rest 30 minutes. Add cranberries and enough all-purpose flour to make a soft dough. Knead on lightly floured surface, about 6 to 8 minutes. Place in a greased bowl, turning once to coat. Cover and let rise in a warm, draft-free area 1 hour or until double in size.
  2. Punch dough down; shape into loaf and place in a greased 9 x 5-inch loaf pan. Let rise 1 hour, or until dough has topped the edge of the pan. Bake in a preheated 350°F oven for 55 to 60 minutes or until lightly browned.
